Hi friends!

I’ve been concocting some interesting eats lately and it’s sad when I forget about yummy things I’ve made in the past. Taking pics helps me remember, so here I am again. I may not consistently record everything; might just pop in with interesting new creations time and again. Time will tell.

In other news, Food Protege did fabulously on her elimination diet. She can (very happily) handle moo dairy, but gluten is no bueno. Surprised? No. After the three-week experiment, she strayed back to the ways of gluten but is now back on the wagon. She is working through the phases of acceptance that this will be a forever thing if she wants to feel good. Totally normal to go through fits and starts like that and I’m counseling her as much as she needs. (She also ran a very difficult half-marathon in 2:07 last weekend. woot!)

Another “subject” I’ve counseled on who suffers from Crohn’s is FINALLY doing better following the SCD. It’s taken a long time and fruitless doctor’s appointments for her to get to this point. Once she’s a bit more stable, her mother (my co-worker) wants to go to congress to bring attention to the issue that NONE of her doctors had anything helpful to say about diet. Co-worker’s friends and family think she’s nuts when she tells them this. I told her I would go with her.

Anyway, on to the eats!

OMG, this was a TON of food compared to my usual breakfast lately. So. Stuffed. Blech. The tomato egg cups were a new experiment. Not worth it; they’ll go in the reject pile.

Wow, that’s dark. oops. Well, even though you can’t see it, dinner WAS Butter Chicken, Roasted Broccoli, and Pickled Squash. This was the first time I’d made this chicken. LORDY, it was GOOOOOD! I modified the recipe slightly, but you can find the original here. Make it!

After a quick bike ride, I cooled off with a Green Frozen Lemonade. I’ve been making a lot of blended fruit things lately. This is one of my favorites. It’s simple and totally satisfying for like 20 calories. Plus, lemon juice does fabulous things for digestion.

1 cup ice
3 T lemon juice
1/2 c water or seltzer
2 c spinach
stevia or honey to taste (optional)

Blend, baby, blend! Yum. It looks really cool too.

On sale this week. It was almost as thick as their yogurt so I threw in a blob of raspberry pomegranate fruit spread and enjoyed with a spoon.

Ok, so the crust got a little burnt. Don’t worry about it. It was still delicious. Instead of the citrus salsa the recipe called for, I blistered some grape tomatoes with cilantro, lemon, and lime juice. The greens were a delicious variation on my usual braised greens.

The perfect dairy-free, sugar-free, chocolate-free chocolate shake. This time I used more ice and added some chia. Ice, almond milk, banana, chia seeds, almond butter, carob powder, chocolate stevia.

Custom Salad at Ingredient Restaurant

Lunch meeting today.  I meet with this client every other Wednesday for a late lunch.  He buys.  I order almost the exact same thing every time.  He thinks I’m a little nuts.  I even keep my order written on a post-it in my wallet.  (Hey – it saves me research time about what is “safe”!)  It goes like this:
 
* mixed baby greens and romaine
* english cucumber
* avocado
* roasted broccoli  
* roma tomatoes or sun-dried tomatoes
* red onion
* snow peas or green peas
* grilled salmon or grilled chicken
* olive oil and balsamic
* hold the bread
 
I used to get all blood-sugary and shakey after this lunch.  Then I realized I was ordering a fat-free raspberry vinegrette.  whoops!  Probably loaded with sugar.  Once I switched to plain oil and vinegar, those episodes went away and this salad fills me way up.  
 

May have created an IF monster. Since I had breakfast today, I wasn’t hungry for dinner. Couldn’t figure out what I’d want anyway. So I went for a walk to try to work up an appetite. That helped, but I still couldn’t figure out what I was craving and nothing on the planned menu sounded right. (The idea of skipping dinner always backfires on me, so I don’t do it. Also, I know I’ll need to IF for breakfast tomorrow.)

Just started throwing things in the pan and this is what came out. Pretty tasty!

I usually get the Turkey version of this sausage. Don’t know how I ended up with Pork this time, but it was pretty good.

I love eating chicken mix-up. Partially because I eat it right out of the pan and it seems like a ton of food even though it really isn’t.

Chocolate Shake

I had a craving for a chocolate shake after lunch. It was still with me after dinner so I whipped this up. Suppose I should mention that this is dairy-free, sugar-free, and chocolate-free.

WHAT?! Yes, a chocolate-free chocolate shake. Chocolate is no bueno for me. The last time I had some I even developed hives! So I’m staying away unless there’s a compelling reason not to. I used carob powder to create the chocolate color and chocolate flavored stevia for the chocolate taste. yum. It hit the spot.

I made this frittata for breakfast, but I wasn’t hungry. Packed it up for the road. Honestly, my stomach was majorly unhappy this morning. Too many cookies last night, perhaps?

For “evening snack”, I had some of the breakfast frittata and a couple of strawberries.

Admittedly, this doesn’t look like much for a day, but there was also the snacking that goes on that I didn’t photo…. more macaroons, some cashews, and tortilla chips. I’d already polluted myself with corn for the day (fish breading), so I figured I’d go all in and indulge in a couple handfuls of chips. Definitely a 90/10 kinda day.

Egg + Egg White Scramble, Rutabaga Sweet Potato Puree, Cheezy Veggie Sauce (the yellow-orange bit at 4:00)

I dipped the egg in the cheezy sauce to eat. Yum. I don’t like how anemic eggs look when I add so much whites to the mix. Gimme those bright orange pastured eggs!

Food Protege confessed today that she had a bite of something verboten. And loved it. Until an hour later. I love feeling like all this time I’ve invested on research over the past few years is helping someone other than myself. Just a little over a week to go. Where’s my next client?

More IF research, but still nothing conclusive. A lot of of the evidence is anecdotal, but does seem to indicate hormone levels aren’t negatively affected with fasting periods shorter than 24 hours. I’ve linked the article above because some of you (ahem, Chris) might be interested in the section entitled ‘Breakfast’. I love eggs too much to do IF every day. But based on research that showed women derived the most positive effects with a short fast every four days, I’m thinking twice a week would be doable.

I think crockpots should be renamed ‘Feline Torture Device’. This roast cooked all day and drove the cats absolutely bonkers.
